IGT Toscana Rosato - BIO

ROSAJO is the latest wine born in Valdonica. It is a still Rosé from Sangiovese grapes. Handpicked between end of August and beginning of September – when the grapes are still rich in acidity. Immediately processed by light pressing. Gentle pressing allows a slight extraction of the color. Fermentation at low temperature allows the wine to develop its genuine, natural aromas. On the palate the high acidity gives the wine an incomparable freshness. The minerality originating from our soils adds complexity and elegance.

Very slightly tomato-vegetable nose with restrained fruitiness as well as nutty and mushroomy nuances. Clear, tart-juicy fruit, again with nutty, mushroomy and vegetal tones, a hint of smokiness on the palate, grip of crumbly tannin, relatively lively acidity, bacony and peppery tones, also a little salt in the background, good to very good finish.

ROSAJO is friendly, easy to drink, refreshing … with substance. Drinks well throughout the day and ideal with fish dishes.
